When we pull an espresso shot into a glass, it separates into three distinct visual layers:

The Heart: The dark, dense base at the very bottom. It contains the heavy soluble solids and provides the intense, bitter balance of the shot.
The Body: The rich, caramel-brown middle layer. This is the main section of the espresso, holding the suspended coffee oils and solids that give the shot its full texture and sweetness.
The Crema: The creamy, golden-tan foam on top. It consists of trapped carbon dioxide gas bubbles emulsified with coffee oils, adding aroma, a velvety mouthfeel, and a sign of fresh, well-extracted beans.
