Our Coffee & Water Story
We craft our specialty espresso drinks using premium single-origin beans, carefully curated to showcase the world's finest coffee-growing regions. Our current lineup features two incredible selections:
Antigua, Guatemala: A medium-roast Caturra and Bourbon blend celebrated for its crisp, clean acidity, deep sweetness, and rich notes of milk chocolate and stone fruit.
Andes, Colombia: Sourced from the mountainous Antioquia region outside the vibrant coffee town of Andes, this selection brings a beautifully balanced, classic cup bursting with rich cocoa, smooth caramel, and subtle fruit undertones.
The Chemistry of Taste: Pure Water, True Extraction
To let these complex, vibrant flavors truly shine, we custom-tailor our water source from the ground up. We start with incredibly pure, deep-earth well water, which gives us a completely pristine baseline. From there, we refine it through a specialized calcite filtration process to achieve a perfectly balanced pH of 7.5.
While this precise mineral balance protects our artisanal espresso equipment from wear, it does something even more important for your cup: it acts as a flavor magnifier. By intentionally adding just the right natural minerals back into this ultra-clean water, we create the perfect environment for extraction. This ideal chemistry bonds with the organic compounds in the coffee, unlocking and pulling out the hidden, nuanced notes of cocoa, caramel, and fruit that would otherwise stay trapped in the grounds.
Honoring the Fruit: Why We Never Burn Our Beans
At its heart, specialty coffee is a culinary experience. A lot of people forget that coffee doesn't start as a dark, oily bean—it begins as a fruit. The coffee bean is actually the seed of a sweet, vibrant cherry grown with intense care by farmers around the world.
Because we respect that journey, we never burn our beans. Mass-produced coffee is often over-roasted to hide defects, resulting in a bitter, ash-like taste. We brew to honor the fruit. By steering clear of heavy, smoky roasts, we preserve the natural sugars, bright acids, and distinct regional flavors locked inside the seed.
